Our High-Protein Mexican Breakfast Bowls combine familiar flavors—papitas, huevos, frijoles, pico de gallo and avocado—into a filling breakfast you can prep ahead and actually look forward to eating.
No sad “diet breakfast.” No pretending three almonds will hold us over until lunch.
Just real food that makes a busy morning a little easier.

Ingredients
For the potatoes
1 lb baby gold or russet potatoes, diced into small cubes
2 teaspoons olive oil
½ teaspoon chili powder
½ teaspoon garlic powder
¼ teaspoon ground cumin
¼ teaspoon salt
Black pepper to taste
For the beans
1 (15-ounce) can black beans, drained and rinsed
¼ teaspoon garlic powder
Pinch of salt
For the eggs
8 large eggs
2 tablespoons of lowfat milk
Salt and pepper to taste
Cooking spray or 1 teaspoon olive oil
For assembling
1 cup pico de gallo
1 avocado, sliced or diced
½ cup shredded Mexican-blend or Monterey Jack cheese
¼ cup chopped fresh cilantro
Salsa or hot sauce, optional
How to Make Them
1. Cook the potatoes
Heat the oven to 425°F.
Toss the diced potatoes with olive oil, chili powder, garlic powder, cumin, salt and pepper. Spread them on a sheet pan in a single layer.
Roast for 20–25 minutes, tossing once halfway through, until browned and tender.
2. Season the black beans
While the potatoes cook, add the drained black beans to a small saucepan with garlic powder, salt and a splash of water.
Warm over medium-low heat for about 5 minutes, stirring occasionally.
3. Scramble the eggs
Whisk together the eggs, milk and a little salt and pepper.
Heat a nonstick skillet over medium-low heat, add cooking spray or olive oil and cook the eggs gently until just set.
Amiga tip: If you're meal prepping these, don't overcook the eggs. They'll cook a little more when you reheat them later.
4. Build your bowls
Divide the potatoes, black beans and scrambled eggs among four bowls.
Top each with cheese, pico de gallo, avocado and cilantro. Finish with fresh lime juice and salsa or hot sauce if you like a little kick.
And breakfast is handled.
