There’s something about chicken tinga that always feels like home—the smoky chipotle, tender shredded chicken, and rich tomato flavor coming together in one comforting bite.

This lighter version keeps all that sabor while making a few simple swaps that work beautifully for an everyday family meal. We’re using lean chicken, baked tostadas, and plenty of fresh toppings for a meal that feels satisfying, colorful, and full of flavor.

Ingredients

  • 1½ lb boneless, skinless chicken breast

  • 1 tablespoon olive oil or avocado oil

  • 1 medium white onion, thinly sliced

  • 2 garlic cloves

  • 4 Roma tomatoes

  • 1–2 chipotle peppers in adobo

  • 1 teaspoon Mexican oregano

  • ½ teaspoon ground cumin

  • ½ cup low-sodium chicken broth

  • Salt and black pepper to taste

  • Fresh cilantro

For Serving

  • Baked corn tostadas

  • Shredded lettuce or cabbage

  • Sliced avocado

  • Thinly sliced radishes

  • Fresh cilantro

  • Crumbled queso fresco

How to Make Chicken Tinga

1. Cook the chicken
Place the chicken breasts in a pot and cover with water or low-sodium chicken broth. Bring to a gentle simmer and cook until the chicken reaches 165°F. Remove from the pot, let it cool slightly, then shred with two forks.

2. Make the tinga sauce
Blend the Roma tomatoes, garlic, chipotle peppers, and ½ cup chicken broth until smooth.

3. Sauté the onion
Heat 1 tablespoon olive or avocado oil in a large skillet over medium heat. Add the sliced onion and cook until softened, about 4–5 minutes.

4. Build the flavor
Pour the tomato-chipotle mixture into the skillet. Stir in the Mexican oregano and cumin. Season lightly with salt and black pepper. Simmer for about 5 minutes.

5. Add the chicken
Stir the shredded chicken into the sauce. Reduce the heat and simmer for another 8–10 minutes, stirring occasionally, until the chicken has absorbed that smoky tomato-chipotle flavor.

6. Finish with freshness
Taste and adjust the seasoning. Add a squeeze of fresh lime and a little chopped cilantro.

7. Build your tostadas
Spoon the warm chicken tinga over baked corn tostadas. Top with shredded lettuce or cabbage, avocado, radishes, cilantro, queso fresco, and a squeeze of lime.
